Okie Food

Fried Pies
by Mary Bowlan

These are not your run-of-the-mill, politically-correct desserts. These are stick-to-your ribs, can't-eat-just-one real food. These are not on the approved list if you are watching your weight or your cholesterol.

  • One Pound or so - Dried peaches, apricots, etc.
  • 3/4 Cup - Sugar
  • 4 Cups Bisquick
  • 4 Tablespoons of Vegetable oil
  • 1 Cup - Water

Soak the dried fruit in water, just to cover, overnight. Cook in the soaking water until soft. Mash and add 3/4 cup sugar.

Mix together 4 cups of Bisquick and 4 tablespoons of vegetable oil. Add1 cup of water slowly until dough is workable. roll out dough about 1/4 inch thick and cut into 8 inch circles.

Put a couple of tablespoons of the fruit mixture in the middle of the circles and fold over sealling the edges with the tines of a fork. Cook in hot oil to cover until golden brown.

These are the best things you'll ever put in your mouth.

If you have any recipes to contribute, I would love to hear from you. Please e-mail me or send me a comment and I will answer. I would like to get as many recipes from this area and era as I can.
